Let Me Eat Cake

I went to the coolest store yesterday. All gluten-free. Everything in the store. Found some yummy stuff and found things that I don’t see at any of the six grocery stores I frequent. Decided to give this Gluten-Free Pantry cake mix a try, as the next attempt in my endless quest to find the perfect cake.

The batter was super easy to prepare and looked halfway normal. I felt optimistic.

It only took 28 minutes to bake and came out looking like … well, cake.

Appearance was really good. Texture is dry, a bit crumbly. Taste: It’s not objectionable, but it tastes like rice. Sigh. The search continues.

I do a lot of GFCF cooking for my daughter and have found that this mix works a lot better as a cupcake than a cake - it taste more normal in a compact size somehow (although still not like “real cake”). However, I made a cake this year for her birthday that was 2 tiers one was regular and the other was GFCF and the GFCF one was the most popular. The recipe I used was the “chocolate cake gluten free” found on the Bob’s Red Mill website (www.bobsredmill.com). Give it a try, it is my go to recipe from now on.

I finally found and tried the Betty Crocker gluten-free chocolate cake and brownie mix. And it’s wonderful. It uses butter instead of oil, which probably helps. It tastes like real brownies and real cake. It makes me feel like a normal person again. Even my kids like it.

Hello. I read alot of your blog(s) but don’t comment much. Buut this made me feel like I had to comment, because a life without treats is not a happy one. I am vegan and usually turn to Cherrybrook Farms for cake/brownie mixes. The majority of them are gluten free as well. You can order them from amazon.com, and I think the specific line is called gluten free dreams. Have you tried these yet?
